Ideas for Food Prep:
- Think about pre-chopping your onions. It’s nice to have them already done and ready to go.

Lamb Saute is simply a variation of a ground beef or Italian sausage saute. Lamb and eggplant were made for each other. Think of it as a Greek pasta sauce. I usually serve it over orzo. It’s also great over rice, or you can make it really heavy on vegetables and eat it by itself.
Over medium to medium high heat, brown ground lamb. Remove from skillet, but leave the fat in the pan. Saute a medium onion, chopped over medium-high heat. Augment the lamb fat with olive oil if need be. When the onion is starting to brown, add minced garlic. Saute for 1 minute. Add diced eggplant (and summer squash/sweet pepper) to skillet and saute. Let the vegetables get good and tender. Squeeze some lemon juice over everything and add a pinch of chile flakes. You can stop here (just add the lamb back and heat everything up) or you can add diced fresh or canned tomatoes. I usually add minced fresh oregano (or dried oregano when I add the vegetables). Chopped kalamata olives are nice to add at this point too. Add the lamb back in and serve over pasta or rice.
