Eat Your CSA – Week 25

This week,  my box included:
  • arugula
  • chard
  • eggplant
  • green onions
  • leeks
  • lettuce
  • peppers, sweet
  • pumpkin
  • radishes
  • sweet potatoes
  • tomatoes, salad

Ideas for Food Prep:

  • Go ahead and pre-wash your salad greens! Make sure you’ve got salad dressings on hand.
  • Trim the greens off your radishes and go ahead and wash them and the sweet peppers for snacks.
  • Clean and chop your leeks so they’re ready to go.
  • Consider pre-baking your pumpkin. It makes it easier to use spur of the moment when you’re making dinner

SALAD GREENS:
BLT Pasta Salad (gf) – just use gluten free pasta
Cardamom and Pistachio Crusted Goat Cheese Salad (veg gf)
Tomato & Arugula Balsamic Pasta Salad (veg gf v)

CHARD/KALE:
Sweet Potato Chicken Kale Skillet (gf)
Garlic-Ginger Noodle Soup with Winter Greens (veg v)
Cheesy Panade with Swiss Chard, Beans & Sausage

EGGPLANT:
South Indian Eggplant Curry (veg gf v)
Eggplant and Caramelized Onion Pizza (veg v)
Grilled Eggplant and Spinach Salad (veg gf v)

LEEKS:
Beef Barley Soup with Lemon – this is currently cooking. I’ll report back.
Quinoa, Carrots and Leek Patties (veg gf)
Chicken, Leeks and Spinach in a Creamy Wine Sauce (gf) – use chard instead of spinach

PEPPERS, SWEET:
Sweet Pepper Honey Cornbread Muffins (veg)
Easy Paleo Chicken With Baby Spinach And Mini Sweet Peppers (gf) – use whatever greens you have
Mexican Quinoa Salad (veg gf v) – use a little sugar or agave to make it vegan

PUMPKIN:
Baked Risotto with Winter Squash (veg gf) – just sub in pumpkin for the winter squash
Roasted Pumpkin Quiche with Caramelized Onions, Gorgonzola and Sage (veg)
Chicken with Pumpkin and Mushrooms

RADISHES:
Beet, Cucumber, and Radish Salad with Basil Pesto Vinaigrette (veg gf v)
Radish and Herb Salad with White Bean and Fried Shallot (veg gf v)
Radish and Goat Cheese Toast (veg)

SWEET POTATOES: 
Chipotle Turkey and Sweet Potato Chili (gf)
Roasted Sweet Potato Quinoa Black Bean Salad (veg gf v)
Crispy Baked Black Bean & Sweet Potato Tacos (veg gf)

SALAD TOMATOES:
Slow Roasted Tomatoes with Olive Oil and Thyme (veg gf v)
Roasted Garlic & Tomato Lentil Salad (veg gf v) – just cut your roasted tomatoes up into pieces
2 Minute Omelet in a Mug (veg gf)

Please read! If a recipe can very easily be made vegetarian, vegan or gluten-free using simple substitutes like non-dairy spread, vegetable stock, gluten free pasta, gluten free soy sauce or a small amount of gluten free flour, or by leaving out an ingredient, I’ve coded them with that in mind. If they include things like mayonnaise, eggs, milk, honey or large quantities of flour, I haven’t coded them as such. I don’t have experience using things like egg substitute, non-dairy cheese or subbing in gluten-free flours. Please double check the ingredients for your own safety!
