Eat Your CSA – Week 28

This week,  our box included:
  • arugula/beet greens/lettuce
  • carrots
  • chard/kale
  • eggplant
  • garlic
  • green onions
  • leeks
  • peppers, sweet
  • radishes
  • spinach
  • squash, winter

Ideas for Food Prep:

  • Go ahead and pre-wash your salad greens! Make sure you’ve got salad dressings on hand.
  • Wash and cut up your carrots, radishes and sweet peppers for snacks.
  • Clean and chop your leeks so they’re ready to go.

Here are some recipes to try!

SALAD GREENS:
Wilted Lettuce Salad (gf)
Apple Pecan Rosemary Greek Yogurt Chicken Salad (gf)
Vegetarian Lettuce Wraps (veg gf v) 

CARROTS:
Vegan Carrot Soup with Caramelized Onions (veg gf v)
Quinoa with Moroccan Winter Squash and Carrot Stew (veg gf v) – sub in any other oil for the butter to make vegan
Carrot Turmeric Red Lentil Stew (veg gf v) 

CHARD/KALE:
Easy 30-Minute Kale, White Bean, and Chicken Soup (gf)
Warm Eggplant, Mushroom and Kale Salad (veg gf)
Swiss Chard Potato Chive Frittata (veg gf)

EGGPLANT:
Moroccan Eggplant Stew (veg gf v)
Roasted Eggplant With Tahini, Pine Nuts, and Lentils (veg gf v)
Eggplant and Italian Sausage Gratin (gf)

LEEKS:
Chicken, Leek and Brie Pie
Leek and Potato Pan Roast (veg gf v)
Simple Slow Roasted Leeks (veg gf v)

PEPPERS, SWEET: If you don’t have enough peppers, sub in other vegetables. Eggplant would work well.
Sweet and Sour Chickpeas with Peppers (veg gf v)
Buffalo Hummus Stuffed Sweet Pepper Poppers (veg gf v) – serve the carrots & radishes with this too.
Sausage, Pepper and Rice Skillet (gf)

RADISHES:
Cabbage, Apple and Radish Cole Slaw (veg gf)
Radish Butter on Toasted Baguette (veg)
Sesame Crusted Tuna and Soba Noodle Bowls – serve this with sliced radishes on top

SPINACH:
Ricotta and Spinach Calzones (veg)
Chicken Mushroom and Spinach Lasagna
10-Minute White Bean Parmesan Spinach Soup (veg gf)

SQUASH, WINTER:
Spicy Ground Beef and Butternut Squash (gf)
Roasted Butternut Squash Salad (veg gf) 
Butternut Squash Ravioli with a Sage Brown Butter Sauce (veg)

I tried to include lots of warming foods to help us adjust to the cold weather. Have a wonderful week, everyone!

gf: gluten free

Please read! If a recipe can very easily be made vegetarian, vegan or gluten-free using simple substitutes like non-dairy spread, vegetable stock, gluten free pasta, gluten free soy sauce or a small amount of gluten free flour, or by leaving out an ingredient, I’ve coded them with that in mind. If they include things like mayonnaise, eggs, milk, honey or large quantities of flour, I haven’t coded them as such. I don’t have experience using things like egg substitute, non-dairy cheese or subbing in gluten-free flours. Please double check the ingredients for your own safety!
