Eat Your CSA – Week 30

This week,  my box included:
  • black beans
  • carrots
  • chard
  • cornmeal
  • garlic
  • popcorn
  • potatoes, sweet
  • salad greens
  • spinach
  • squash, winter
  • turnips

Ideas for Food Prep:

  • Go ahead and pre-wash your salad greens! Make sure you’ve got salad dressings on hand. Here’s a great article on weekly salad prep.
  • Wash and cut up your carrots and turnips for snacks.
  • You can cut up your winter squash so it’s ready to go, or you can pre-roast some of your sweet potatoes or winter squash to have on hand. You can use them to top pizzas, throw in quick curries or add to pasta.
  • Go ahead and cook your beans to have them ready to use.

Here are some recipes to try!

BLACK BEANS (you can just sub in cooked dried beans for canned beans):
Note – it’s a myth that adding salt before cooking beans will make them tough. If you season them at the beginning of cooking, they’ll be better seasoned and creamier.
Cilantro-Lime Black Bean Rice (veg gf v)
Sweet Potato Black Bean Burger (veg gf v)
Mexican Black Beans (veg gf v)

CARROTS:
Thai Carrot Salad with Curried Cashews (veg gf v)
Carrot Cake Overnight Oats (veg gf v)
Butternut Squash, Sweet Potato, Carrot Soup (veg gf v)

CHARD/KALE:
Garlicky Swiss Chard and Chickpeas (veg gf v)
Moroccan Red Lentil Soup with Chard (veg gf v)
Rustic Tuscan-Style Sausage, White Bean, and Kale Soup (gf)

CORNMEAL:
Spinach Quiche with a Cornmeal Crust (veg)
Cornmeal Sugar Cookies (veg)
Southern Johnny Cakes (Hoe Cakes) (veg)

POPCORN:
Perfect Popcorn (veg gf) – My favorite way to make popcorn is using a whirly pop. I hesitate to give more recipes because this popcorn is so great plain, but here you go.
Homemade Sweet and Salty Popcorn (veg gf)
Rosemary Parmesan Popcorn (veg gf)

POTATOES, SWEET:
Sweet Potato Black Bean Chili (veg gf v)
Sweet Potato Casserole with Marshmallows and Streusel (veg)
Sweet Potato Cinnamon Roll Cake (veg)

SALAD GREENS:
Guacamole Greens Salad with Cilantro Lime Jalapeño Vinaigrette (gf) – carrots or sweet potatoes subbed in for the tomatoes would be great
Apple Walnut Cranberry Salad (veg gf)
Ginger-Sesame Vinaigrette (veg gf v)

SPINACH:
Spinach Balls ( veg gf)
Bacon and Spinach Pasta with Parmesan (gf)
Spinach Quiche with a Sweet Potato Crust (veg gf) 

SQUASH, WINTER (remember that you can usually sub one kind of winter squash for another)
Butternut Squash Chili (veg gf v)
Butternut Squash & Mushroom Enchiladas with Tomatillo Sauce (veg gf) – canned tomatillos would work in this
Butternut Squash Soup with Smoked Gouda and Spicy Chickpeas (veg gf) 

TURNIPS:
Herb Roasted Sweet Potato and Turnip Skillet (veg gf)
Turnip Au Gratin (veg gf)
Sweet Turnip and Carrot Soup (veg gf v)

Please read! If a recipe can very easily be made vegetarian, vegan or gluten-free using simple substitutes like non-dairy spread, vegetable stock, gluten free pasta, gluten free soy sauce or a small amount of gluten free flour, or by leaving out an ingredient, I’ve coded them with that in mind. If they include things like mayonnaise, eggs, milk, honey or large quantities of flour, I haven’t coded them as such. I don’t have experience using things like egg substitute, non-dairy cheese or subbing in gluten-free flours. Please double check the ingredients for your own safety!
