Eat Your CSA – Week Twenty-two

This week, my box included:
  • arugula
  • beets
  • bok choy
  • eggplant
  • garlic
  • green onions
  • peppers, hot
  • peppers, sweet
  • potatoes
  • potatoes, sweet
  • radishes
  • salad turnips
  • summer squash

 

Ideas for Food Prep:

  • Roast the beets to have on hand
  • Go ahead and pre-wash your arugula! Make sure you’ve got salad dressings on hand.
  • Trim the greens off your radishes and turnips. Wash the turnip greens, so they can be cooked spur of the moment. Or cook them and have them available to add to recipes.
  • Wash the turnips and radishes to have on hand for snacks.

ARUGULA/SPRING MIX:
Pasta With Gorgonzola And Arugula (veg gf)
Roasted Onion Salad with Arugula and Walnut Salsa (veg gf)
Cheddar, Pancetta And Apple Flatbread

BEETS:
Roasted Beets and Sweets with Brown Butter Maple Glaze (veg gf)

Roasted Beet Salad with Oranges and Walnuts (veg gf v) – this would be great over salad greens

BOK CHOY:
Korean-Style Beef Short Ribs with Bok Choy (gf) – chop up bok choy into large pieces
Quick Thai Beef Bok Choy Rice Bowl (gf)
Singapore Noodles (veg v)

EGGPLANT:
Summer Vegetable Lasagna With Zucchini, Squash, Eggplant, and Tomato (veg)
Baked Eggplant With Ricotta, Mozzarella, and Anchovy (gf)
Thai Tofu, Butternut Squash, and Eggplant Soup (veg gf v) 

PEPPERS, SWEET:
Sheet Pan White Pizza with Salami and Peppers
Sriracha-Spiced Stir-Fried Tofu with Eggplant, Red Bell Pepper, and Thai Basil (veg gf v)
Whole Wheat Pasta with Mushrooms, Sweet Peppers, and Fontina Cheese (veg)

POTATOES:
Oven-Roasted Beets and Potatoes (veg gf)
Potato, Pecorino & Rosemary bread (veg)
Potato Rösti (veg gf) 

POTATOES, SWEET:
Sweet Potato Kale and Quinoa Fritters (veg gf v) – use turnip greens
Roasted Sweet Potato Salad With Citrus Vinaigrette (veg gf v)
Roasted Sweet Potato Salad (gf) 

RADISHES:
Simple Roasted Radishes with Balsamic (veg gf v)
Creamy Radish Soup (veg gf)
Cucumber Radish Apple Salad (veg gf v) 

SALAD TURNIPS: 
Japanese Turnips with Miso (veg gf)
Turnip Soup With Its Turnip Greens (veg gf v)
Hakurei Turnip Farro Salad (veg v)

SUMMER SQUASH:
Provencal Summer Squash and Potato Gratin (veg gf)
Socca Pizza with Summer Squash and Feta (veg gf)
Grilled Ratatouille Kebabs (veg gf v)

Please read! If a recipe can very easily be made vegetarian, vegan or gluten-free using simple substitutes like non-dairy spread, vegetable stock, gluten free pasta, gluten free soy sauce or a small amount of gluten free flour, or by leaving out an ingredient, I’ve coded them with that in mind. If they include things like mayonnaise, eggs, milk, honey or large quantities of flour, I haven’t coded them as such. I don’t have experience using things like egg substitute, non-dairy cheese or subbing in gluten-free flours. Please double check the ingredients for your own safety!
