How We Ate Our CSA Share – Week Eight

PRODUCE I RECEIVED:

  • green beans
  • kale

PRODUCE WE HAD:

  • new potatoes
  • scallions
  • beets
  • green cabbage
  • broccoli
  • sugar snap peas
  • garlic scapes
  • fennel
  • napa cabbage

WAYS WE’VE USED OUR PRODUCE:

Breakfasts:
Scrambled eggs with garlic scapes, greens, and cheddar

Wednesday 6/7:
Dinner: Chicken cobb salad sans tomato

Thursday 6/8:
Lunch: leftover salad
Dinner: Out

Friday 6/9 (camping):
Lunch: Out
Dinner: Cured meats, cheese bread, smoked salmon dip with cucumbers, birthday cake!

Saturday 6/10 (camping):
Lunch: late breakfast and we grazed on leftovers
Dinner: Lamb kebabs, foil roasted potatoes & green beans

Sunday 6/11 (camping):
Breakfast: Fennel and Sausage Breakfast Hash (heavy on the fennel)
Lunch: Sandwiches
Dinner: Taco truck

Monday 6/12:
Lunch: Frozen dinner :/
Dinner: Okonomiyaki

Tuesday 6/13:
Lunch: Salad and leftover Okonomiyaki
Dinner: Sliced cucumbers, wings and ranch dressing

Snacks:
It was not a very snacky week.

PUT UP:
nothing

GIVEN AWAY:
nothing

CARRYING OVER INTO NEXT WEEK:
scallions
beets – tons of them
summer squash
fennel
green cabbage
broccoli
napa cabbage

WASTED:
sugar snap peas

THOUGHTS ON THIS PAST WEEK’S FOOD:

I’m pretty proud of the fact that we used up so many vegetables while camping. The fennel and sausage hash was amazing. That it definitely going to be made on our next camping trip, maybe even sooner. The green beans and potatoes were also very tasty.

While I wouldn’t say she’s crazy for it, Madeline seemed to like the okonomiyaki. We chopped the cabbage more finely to make it easier for her to eat. We did not give her the sriracha-mayo sauce.  She is also a huge fan of lamb, but not very hot on the smoked salmon dip.

I have to do something about the beets. They are not my favorite vegetable, but it’s getting ridiculous. I’m pretty sure I can hear them mocking me when I close the refrigerator door. And if I don’t figure out how to eat the summer squash real quick, we may end up buried in them.
