THOUGHTS ON THIS PAST WEEK’S FOOD:
This week was nuts for us. I was gone the entire weekend, and I’ve had meetings every night this week. I think it’s pretty clear to see that if you’re constantly traveling or unable to cook often, a CSA is probably not the best choice for you. Luckily, things will calm down a bit after this month. Maybe I’m just stubborn, but I really do want to try to use up as much as I can this week. I’m not sure if it will be possible because I’ll be traveling again.
Shakshuka (AKA Eggs in Hell in other countries) is a great way to use up all kinds of vegetables. You can do a red version with tomatoes and peppers as well.
